Zest for: homemade yogurt

If I had known how easy the process of DIY plant-based yogurt would be I would have started eons ago. The below recipe is a goodie from Future Food Institute.

The first step is to combine the below ingredients to create the coconut cream base. Add more salt and lemon to taste.

  • 1 Liter full-fat coconut cream

  • 70g Refined coconut oil, melted

  • 5g  Vanilla extract

  • 45g Maple syrup

  • 1tsp Lemon juice

  • 2g Salt

Once all ingredients are combined proceed to the fermenting stage. Stir in 5 live probiotic capsules (minimum 2 billion CFU) and let the mixture sit at room temperature between 12-18 hours.

The final step is yogurt consistency! Pour the fermented yogurt mixture into a blender. Combine the below ingredients to boil stirring for 10 seconds. Stream the Agar Agar into a blender until the desired consistency is reached.

  • 4g Agar agar powder (if using flakes, use 12g and cook for 2-3 minutes)

  • 40g Water
